Detox Carrot Slaw

This Asian inspired carrot slaw is all over TikTok at the moment and for a good reason: it’s addictive! Not only that, it’s good for you too as the carrots are full of vitamin A and have detoxifying properties. 

Ingredients: (preferably organic)

  • 4 medium sized carrots, peeled
  • a bunch of cilantro, chopped
  • the green of a spring onion, chopped
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • ½ lime, squeezed
  • ½ tbsp maple syrup
  • ½ tsp pink Himalayan salt
  • black sesame seeds, for garnish

Directions:

01. Shave the carrots with the vegetable peeler into long shavings and place in a bowl.

02. Mix the rice vinegar, sesame oil, lime, maple syrup and pink Himalayan salt to combine for the dressing.

03. Pour the dressing over the carrot salad, add the cilantro and spring onion and mix well. Garnish with black sesame seeds and enjoy! Tip: Chill the salad in fridge for a few hours and let it marinate, it will taste even better!
