This is such a simple dish that looks beautiful when you have guests over plus it’s delicious and satisfying. Serve it along crispy potato cuts and even meat lovers will be delighted. Cruciferous vegetables are rich in folate and vitamin C as well as protective antioxidants, making your skin glow and fighting cell damage. To top it off, the green tahini dressing is a super detoxifier as parsley and cilantro are known to bind heavy metals in the body.
Serves 4
Ingredients: (preferably organic)
- 1 whole cauliflower
- 1 tbsp olive oil
- ½ tsp pink Himalyan salt
- parsley, chopped, for garnish
- pomegranate seeds, for garnish
Green Tahini Dressing
- ¼ cup tahini
- ½ cup cold water
- 2 tbsp olive oil
- ½ lemon, juiced
- ½ bunch cilantro, chopped
- ½ bunch parsley, chopped
- ½ clove garlic
- ½ tsp pink Himalayan salt
01. Steam the cauliflower in the steamer or in a pot with a bit of water until tender, about 15-20 minutes.
02. Pre-heat the oven to 200 degrees and place the cauliflower on a parchment paper lined baking sheet. Drizzle with olive oil and salt and bake for about an hour until golden and crispy.
03. Make the green tahini dressing by combining all ingredients in a blender and blending until smooth.
04. To serve, place the cauliflower on a large plate and drizzle with green tahini dressing. Garnish with fresh parsley and pomegranate seeds.
