Vegan Pasta alla Vodka

No words needed, this is the dreamiest creamiest Vodka pasta ever!! My probably forever favorite dish.

Serves two.

Ingredients: (preferably organic)

  • 1 box of pasta of choice (I use GF brown rice pasta)
  • 2 cloves garlic, crushed
  • 1 tbsp vegan butter
  • 3 tbsp tomato paste
  • 1 can (250mL) coconut milk
  • 2 tbsp vodka
  • salt, to taste
  • pepper, to taste


Directions:

01. Bring a pot of water to boil and cook the pasta according to the instructions. Drain & set aside.
02. In a frying pan big enough to fit the pasta when it’s done, melt the butter on medium heat and fry the garlic until golden.
03. Squeeze in the tomato paste and cook for two minutes, then add the vodka stirring constantly.
04. Give the alcohol about two minutes to evaporate, then add half of the coconut milk, stir to combine and let it cook for two minutes, and add in the rest of the milk.
05. Mix the pasta into the sauce, arrange on plates and enjoy!
