This is the perfect healthy snack for a special occasion or simply in between to satisfy your crunchy craving. Skip the seed oils of store bought chips and make your own with omega-3 rich avocado oil. Sweet potato has plenty of vitamin C and fiber plus its grounding qualities make it the perfect Fall food transitioning to the colder season.
Ingredients: (preferably organic)
- 2 small sweet potatoes
- 2 tbsp avocado oil
- pink Himalayan salt, to taste
- herb seasoning, to taste
Directions:
01. Pre-heat the oven to 200C. Prepare two baking sheets lined with parchment paper.
02. Slice the sweet potatoes on a mandolin (no peeling necessary). Arrange the slices on the baking sheets and brush with avocado oil. Season with pink salt and herb mix.
03. Bake for ten minutes on one side, then flip and bake ten minutes on the other side.
04. Remove from the oven and let it the chips cool until crunchy. Serve with a yogurt dip or plain.
