Superfood Falafel

I always prefer home-cooked food over store-bought, so naturally I needed to perfect my own falafel recipe. It’s the perfect protein addition to your salad bowls and I upped the nutritional content with powerful hemp seeds and sunflower seeds for that extra plant-protein, fiber and omega-3s.

Ingredients: (preferably organic)

  • 1/3 cup sunflower seeds
  • 1/3 cup hemp seeds
  • 2/3 cup oats
  • 2 handfuls spinach
  • 2/3 cup chickpeas
  • 1 tbsp Dijon mustard
  • 1/3 cup tahini
  • 3 tbsp olive oil
  • 1/3 cup flax meal & 2 tbsp water
  • 1/3 cup water
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1-½ tsp pink Himalyan salt

Directions:

01. Combine all ingredients in a high speed blender & blend until combined. Let it set in the fridge for at least 15 minutes.

02. Heat up some avocado oil in a frying pan, form patties with a tablespoon and fry until golden on both sides. Enjoy in lettuce cups or over a greek salad.
