Super Seed Muesli

Ever since I’m well into my second trimester of pregnancy, I’m more aware of my protein intake since my body has been craving it. Getting enough protein on a plantbased diet is not difficult, there are a lot of great plantbased protein sources and one of them are seeds. They are little powerhouses boasting a high nutrient-density and providing us with plenty of unsaturated fats, protein and fiber. This super seed muesli is a great way to start the day, light but satisfying and full of essential nutrients.

Makes four servings.

Ingredients: (preferably organic)

  • 4 tbsp GF oats
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp ground flaxseed
  • 1 cup oat milk
  • 1 apple
  • ½ cup frozen wild blueberries
  • 1 cup coconut yogurt
  • a squeeze of lemon juice
  • honey or agave syrup, to taste


Directions:

01. In a bowl, mix together oats, chia seeds, hemp seeds & flax seeds. Add oat milk and let soak for at least ten minutes.
02. Finely grate the apple and add to the seed mixture, squeezing in a bit of lemon juice to prevent browning. Mix well.
03. Add the frozen blueberries and coconut yogurt and stir to combine.
04. Sweeten with honey or agave syrup to taste. Enjoy immediately or store in the fridge for up to two days. I like to prepare this the night before so I can only take it out of the fridge in the morning. Also super easy & convenient on the go!
