Craving all of the fresh light greens during this late summer heatwave. It’s such a party in your mouth with all the different textures and flavours. The lettuce is crisp and fresh, the arugula grounding and a bit sharp, the fennel gives a delicate flavor note, the edamame a good bite and the avocado adds some cool creaminess complemented by the dill and sprouts to finish off the flavour festival. The highlight is the dressing made from coconut yogurt, lime and wasabi. Simple but unexpected and so good.
Serves one.
Ingredients: (preferably organic)
- 2 cups romaine lettuce
- 1 cup arugula
- ½ fennel, shaved thinly
- ½ cup edamame
- ½ avocado, diced
- a handful of dill
- a handful of sprouts
Coconut lime wasabi dressing:
- 2 tbsp coconut yogurt
- ½ lime, zested & juiced
- ½ tsp wasabi
- 2-3 tbsp cold water
- Himalayan pink salt, to taste
Directions:
01. In a big bowl, combine all of the salad ingredients.
02. Mix together all the salad dressing ingredients in a small bowl and stir well.
03. Pour the dressing over the salad and enjoy this bowl of pure freshness!
