Super Green Pasta

I like to use any excuse to get more greens in for myself and my family and pasta sauce is the perfect opportunity to squeeze in extra nutrients. It’s also high in plant protein and good fats from the cashews, while being super delicious and quick to make! The perfect weeknight recipe everyone will love!

Ingredients: (preferably organic)

  • 1 cup kale
  • 1 cup spinach
  • a handful of basil
  • 1 clove garlic
  • ¼ cup cashews
  • ½ tsp pink Himalayan salt
  • ½ lemon, squeezed
  • ¼ cup pasta water
  • 1 box GF pasta
  • fresh basil, for garnish
  • hemp seeds, for garnish

Directions:

01. Bring a big pot of water to boil, add salt and when it‘s boiling add the pasta and the spinach and kale on top and quickly blanch until soft. Remove from the pot and transfer the greens to a blender. When the pasta is al dente, set the pasta and some of the pasta water aside.

02. In a blender combine the kale, spinach, basil, garlic, cashews, salt and lemon juice. Add ¼ – ½  cup of pasta water and blend until smooth.

03. Mix the pasta with the sauce, add more pasta water if necessary and serve with some more fresh basil and a sprinkle of hemp seeds.
