Summer Rolls

The weather is finally giving summer and this is the perfect light lunch! It’s an incredibly refreshing recipe that’s also versatile as you can fill the rolls with whatever you prefer. My version has some plant protein from the smoked tofu and good fats from the avocado. 

Ingredients: (preferably organic)

  • 1 box rice paper
  • 2 cups lettuce
  • 2 carrots, julienned
  • 1 cucumber, peeled & julienned
  • 1 block smoked tofu, sliced & pan fried crispy
  • 1 avocado, sliced
  • 1 bunch cilantro, de-stemmed

Peanut Lime Dressing

  • 2 tbsp peanut butter
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 4 tbsp cold water
  • ½ lime, juiced

Directions:

01. Prepare a bowl with warm water and gently soak the rice paper until soft.

02. On a clean work surface, lay out the rice paper and fill with lettuce, carrot slices, cucumber, tofu, avocado & cilantro. Fold in the sides and gently roll it up.

03. Place the finished rolls on a platter and let them rest.

04. Make the dressing: mix together peanut butter, tamari, maple syrup, lime and water until smooth.

05. Cut the summer rolls in half or serve them whole for a snack or light lunch.
