Summer Gold Tomato Tartlets

This is the perfect aperitif snack, taking the flavors of summer to the next level with caramelized sweet tomatoes. Super easy to make and chic to serve, a summer party must have! Tomatoes provide lots of Lycopene which is a potent antioxidant boosting heart and skin health.

Ingredients: (preferably organic)

  • 10 yellow datterini tomatoes, sliced
  • 10 red datterini tomatoes, sliced
  • 1 puff pastry dough, gluten-free
  • a bit of honey
  • a bit of balsamic vinegar
  • a bit of olive oil
  • dried oregano
  • pink Himalayan salt, to taste

Directions: 

01. Pre-heat the oven to 190C.

02. On a parchment paper lined baking sheet make 10 small circles of honey, drizzle with balsamic, olive oil and season with oregano and salt. Place the tomatoes on the seasoning, forming little flowwers alternating the colors.

03. Take a glass jar and cut out 10 circles from your puff pastry. 

04. Lay the puff pastry rounds over the tomato slices and prick with a fork to avoid bubbles. Press down the edges a little bit so the to,atoes are well covered.

05. Bake in the oven for 20-25 minutes until golden. Let them cool for 5 minutes then gently peel off the parchment paper and serve.
