Strawberry Vanilla Overnight Oats

Having a quick breakfast on hand in the morning is key to set yourself up for a successful day ahead. I make my husband a batch of overnight oats every week that he can take to the office in the morning or else he wouldn’t have time for breakfast at all. These delicious strawberry vanilla overnight oats combine healthy fats from nut butter and chia seeds with oats full of fiber and the strawberries and banana add a hint of sweetness and lots of vitamins.

Ingredients: (preferably organic)

  • 1 cup GF oats
  • 2 tbsp chia seeds
  • 1 cup plant milk (I use cashew coconut)
  • 2 tbsp cashew butter
  • 2 tbsp maple syrup
  • a dash of vanilla seeds
  • 1 banana
  • 1.5 cups strawberries
  • coconut flakes, for garnish

Directions:

01. Mix together the oats, chia seeds, milk, cashew butter, maple syrup and vanilla until smooth.

02. Place the banana and strawberries in a blender and mix until smooth.

03. Pour the banana strawberry mix into two mason jars and top with the overnight oats. Sprinkle coconut flakes on top and place in the fridge overnight.
