Smashed Potato Salad

This is the plant-based version of the viral Tiktok smashed potato salad with kind of a tzatziki dressing. It’s the perfect mix of crispy and creamy and it’s great on its own or as a side. Cold potatoes are a pre-biotic, so you are feeding your gut microbiome with their favorite food.

Serves 4

Ingredients: (preferably organic)

  • a few potatoes, boiled in salt water
  • a drizzle of avocado oil
  • pink Himalayan salt
  • 1 cup coconut yogurt
  • 2 persian cucumbers, in small pieces
  • 1 green onion, thinly sliced
  • 1 small clove garlic, minced
  • a squeeze of lemon
  • pink Himalayan salt, to taste
  • black pepper, to taste

Directions:

01. Pre-heat the oven to 200C. Place the potatoes on a parchment paper lined baking sheet and use a sturdy glass to smash the potatoes then drizzle them with avocado oil and pink salt. Bake them for about an hour until crispy.

02. Make the dressing by mixing together the coconut yogurt, cucumbers, green onion, minced garlic, lemon and season with pink salt and pepper.

03. Let the potatoes cool off slightly and mix in the dressing. Top with more spring onion and enjoy!
