Simple Pomodoro Pasta

I’m just going to say it: best classic pasta ever. When in doubt, keep it simple but full of flavor.

Serves 4

Ingredients: (preferably organic)

  • 1 pack Spaghetti (I use gluten-free brown rice pasta)
  • 2 packs datterini tomatoes, halved
  • 4 tbsp olive oil
  • 1 clove garlic, minced
  • a handful basil
  • pink Himalayan salt, to taste
  • black pepper, to taste

Directions:

01. In a large pan, heat up the olive oil and sauté the garlic until golden.

02. Add tomatoes with a pinch of salt and let simmer for ten minutes.

03. Meanwhile, cook the pasta until al dente. 

04. When tomatoes are cooked down, add more salt and pepper to taste.

05. Drain the pasta and add to the tomatoes. Top with fresh basil and combine well. Buon appetito!
