This might seem too simple to even be a recipe, but trust me, there are a few hacks to really make a good avocado toast! It’s my go to quick snack or lunch and I have it at least a few times a week. I love that it’s super versatile with different toppings and seasonings, so satisfying and provides you with all those amazing unsaturated fats.
The lemon, olive oil and pink salt are key for seasoning and really bring out the flavour but then imagination knows no limits! Here are some topping ideas to bring your avocado toast to the next level:
- heirloom tomato slice for freshness (my fav at the moment)
- hemp seeds (read this weeks post about the benefits of hemp as a superfood)
- vegan cream cheese
- basil & cherry tomatoes for that Italian twist
- chili flakes to add some spice
- nutritional yeast for a cheesy flavor & vitamin B12
- arugula for greens
- microgreens
- pickled onions for tanginess
Serves one.
Ingredients: (preferably organic)
- two slices bread of choice (I prefer GF or sourdough)
- 1 avocado, ripe but still firm
- lemon, to taste
- olive oil, to taste
- pink Himalayan salt, to taste
Directions:
01. Toast your bread! It needs to be crisp and still warm.
02. Dice the avocado and place in a bowl. Add lemon juice, olive oil & salt to taste, mix well.
03. With a fork, mash the avo on the bread and garnish with toppings of your choice. Bon appétit!
