Nourishing Shakshuka

New year – same good habits! Health is a lifestyle and what you do every day is what matters the most, that’s why I want to continue bringing you healthy recipes every week based on the ESSENTIELLE nutrition philosophy with anti-inflammatory ingredients and meals consisting of nourishing protein, healthy fats and filling fiber. This shakshuka is the perfect brunch or lunch to start the new year on a healthy note and share with friends or family after a long winter walk or workout.

Serves 2

Ingredients: (preferably organic)

  • 1 tsbp olive oil
  • ½ onion, finely diced
  • 1 clove garlic, finely chopped
  • 1 bell pepper, chopped into bite sized pieces
  • 1 can diced tomatoes
  • black pepper, to taste
  • pink Himalayan salt, to taste
  • 3-4 eggs
  • spring onion, finely chopped
  • parsley, finely chopped
  • 1 avocado, for garnish

Directions:

01. Heat up the olive oil in a pan and add the diced onion and garlic. Sauté until translucent. Add the diced bell pepper and cook it until it starts to soften, for about 3-4 minutes.

02. Add the canned diced tomatoes and cook for 10 minutes on medium heat. Season with salt and pepper to taste.

03. Make three or four dents in the tomato bell pepper mixture to place the eggs and crack each egg into the prepared molds. Cover with a lid and cook for 3-4 minutes.

04. Take the pan off the heat and garnish with avocado, spring onion and parsley and black pepper to taste.
