Rainbow Ratatouille

This is a fun way to serve your veggies, it looks super pretty and is easy to make. Rainbow Ratatouille is the epitome of “eat the rainbow” leaving your gut microbiome super happy with the big array of vegetables.

Ingredients: (preferably organic)

  • 2 zucchini, thinly sliced
  • 1 eggplant, quartered & thinly sliced
  • 1 red horn bell pepper, thinly sliced
  • 1 orange horn bell pepper, thinly sliced
  • 1 yellow horn bell pepper, thinly sliced
  • 1 clove garlic, minced
  • ¼ cup olive oil
  • pink Himalayan salt, to taste
  • black pepper, to taste

Directions:

01. Pre-heat the oven to 180C.

02. In a baking dish, arrange the sliced vegetables nicely taking turns with zucchini, eggplant and bell pepper.

03. Mix the olive oil and minced garlic and pour over the vegetables. Season with salt and pepper and bake for 40 minutes. Serve with rice or potatoes or a protein for a light lunch or dinner.
