
This is my go to lunch or late breakfast at the moment. It’s super simple & quick to make, packed with protein, fiber and good fats and I never get tired of it. Mix and match the veggie side or condiments and you have a new dish every time.
Ingredients: (preferably organic)
- 2 eggs
- 1 tsp ghee
- 2 handfuls arugula
- ½ avocado, sliced
- ¼ cup feta, crumbled
- Some lemon juice
- A drizzle of olive oil
- Pink Himalyan salt, to taste
- Chili oil or hot sauce, to taste
Directions:
01. In a pan, heat up the ghee and crack both eggs into it. Cook them on high heat until crispy on the bottom and them briefly flip them over for a minute. Place on a plate.
02. Arrange the arugula next to the eggs, then the avocado and drizzle it with lemon juice and olive oil. Season with pink salt and crumble some feta on top of the avocado.
03. Drizzle chili oil or hot sauce to your liking and enjoy your high protein breakfast or lunch.
