PB & J Overnight Oats

My husband loves his breakfast for on the go so I try to switch his overnight oats up as often as possible with different flavors. It’s so easy to make a batch ahead at the beginning of the week so you have the perfect breakfast waiting for you every morning. It has lots of fiber and complex carbs from the oats as well as healthy fats and protein from the chia seeds and nut butter.

Serves two.

Ingredients: (preferably organic)

  • 3/4 cup oat milk
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • 2 tbsp peanut or almond butter
  • 1 tsp vanilla extract
  • 1/2 cup GF oats
  • two handfuls raspberries
  • cacao nibs, for garnish

Directions:

01. Mix together the oats, chia seeds, maple syrup, nut butter and vanilla.

02. Prepare two jars and start layering the parfait starting with the raspberries, the oat chia mixture and then top with raspberries again.

03. Let sit overnight in the fridge and enjoy the next morning topped with cacao nibs.
