Minestrone

The best heart & soul warming soup! Minestrone is my go to in the winter, we almost have it every week. The kids love the hearty vegetable soup, especially topped with pasta. It‘s quick and easy and perfect to prepare ahead too!

Serves 4

Ingredients: (preferably organic)

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 large potato, peeled & cut into bite-sized pieces
  • 2 large carrots, peeled & cut into bite-sized pieces
  • 2 stalks celery, chopped
  • 3 leaves kale, de-stemmend & chopped
  • 1 can white beans
  • 1 can tomato sauce
  • 2-4 cups vegetable broth
  • 1 tsp sea salt
  • fresh thyme (dried works too)
  • olive oil, for garnish

Directions:

01. In a large pot, heat up the olive oil, add onion & garlic and fry on medium heat until translucent.

02. Add in the veggies with the longer cooking time: potato, carrots and celery, sauté for a few minutes and deglaze with the vegetable broth. Also add in the fresh thyme leaves. Simmer for about 10 minutes until tender.

03. Add the tomato sauce and simmer for another ten minutes.

04. Season with salt, taste and serve with a drizzle of high-quality olive oil (pesto would also be really great).
