Cozy weekend breakfast is one of our favorite family meals and I’m always looking to incorporate new creations into our rotation. These Lemon Chia Waffles are a fun twist on my basic Banana Oatmeal Pancake recipe, try them for a delicious holiday breakfast!
Makes 4 waffles
Ingredients: (preferably organic)
- 1 banana
- 1 cup GF oats
- 1 tbsp chia seeds
- ½ tsp baking powder
- ¼ tsp vanilla seeds
- a pinch of salt
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 1 cup oat milk
- coconut yogurt, for garnish
- lemon zest, for garnish
- maple syrup, for garnish
Directions:
01. In a high speed blender, combine all ingredients and blend until smooth.
02. Prepare your waffle maker with a bit of coconut oil and bake the waffles until golden.
03. Serve with coconut yogurt, lemon zest and maple syrup. Bon appétit!
