HIGH PROTEIN PANCAKES

My classic banana oat pancakes in a new high protein edition! Just as healthy for an everyday breakfast or an indulgent brunch, they will for sure become your favorite too. I make these for my kids almost every day and I feel great knowing that they are getting all these amazing nutrients from their first meal of the day, as the oats and banana provide healthy fiber, the egg some protein and the chia seeds essential fats.

Makes about 8 small pancakes

Ingredients: (preferably organic)

  • 1 cup gluten-free oats
  • 1 banana
  • 1 egg
  • ½ tbsp chia seeds
  • ¾ cup oat milk
  • ½ tsp baking powder
  • cinnamon, to taste
  • coconut oil, for frying


Directions:

01. Combine all the ingredients in a high-speed blender and blend.
02. Warm a pan up to medium heat, add a bit of coconut oil and fry the pancakes until they get bubbly and firm up on the upper side, then flip and let cook through until golden.
03. Repeat until all the batter is used up. Keep the cooked pancakes warm on a plate covered with tin foil meanwhile.
04. Stack the pancakes, add some berries, sprinkle some cocoa nibs and add a drizzle of maple syrup. Enjoy!
