I know it‘s soup season soon but I‘m still nostalgic for our summer holiday in the South of France this year and wanted to bring you one last summer salad. This was literally the best thing I ate in St. Tropez – I had it in a few places like Loulou and Gigi in different variations and I knew I needed to recreate it because it‘s everything I love – greens, veggies & super simple ingredients. I love having this green bean salad on its own for lunch or as a side dish with some pasta or potatoes for dinner. Run don‘t walk and make this salad for one last taste of summer – I promise everyone will love it.
Ingredients: (preferably organic)
- three handfuls green beans, cooked
- a few handfuls arugula
- some pistachios, chopped, for garnish
- lemon slices, for garnish
Pistou
- a bunch of basil
- ⅓ cup pistachio nuts, shelled
- ½ clove garlic
- ½ lemon, juiced
- pink Himalayan salt, to taste
- ⅓ cup olive oil
01. Make the pistou by combining all the ingredients in a high speed blender or food processor and blend until combined.
02. Assemble the salad by placing the arugula in a wide dish, haricots on top and drizzle with pistou sauce. Garnish with chopped pistachios and lemon slices.
