Our gut microbiome loves fermented foods and this plant yogurt based tzatziki is perfect to boost immunity, skin and hair health. It’s a super refreshing summer dish which is easy to make and goes perfectly with grilled vegetables.
Ingredients: (preferably organic)
- 1.5 cups plant-based yogurt (I use cashew yogurt from New Roots)
- ½ English cucumber, grated
- 1 lemon, zested
- ½ clove garlic, minced
- a squeeze of lemon
- a drizzle of olive oil
- ½ tsp pink Himalayan salt
- a few mint leaves, chopped
- a bit of dill, chopped
Directions:
01. In a bowl, mix together the yogurt, cucumber, lemon zest, minced garlic, lemon juice, olive oil and salt.
02. Top with the chopped herbs and serve alongside grilled vegetables.
