This is a family favorite and perfect for chilly nights during the colder season. Lentils are a true superfood, providing you with complex carbs, plant-protein and fiber and a great source of folate and potassium.
Serves two.
Ingredients: (preferably organic)
- 1 cup brown or green lentils
- 1 tbsp olive oil
- 1 onion, finely diced
- 1 clove garlic, minced
- 2 medium carrots, finely diced
- 2 stalks celery, finely diced
- 1 small potato, finely diced
- 3 cups vegetable broth (more if desired)
- 4 sprigs fresh thyme
- 1 lemon, zested
- 1 tsp sea salt
- black pepper, to taste
Directions:
01. In a large pot, heat up the olive oil, add onion, garlic and sauté until translucent.
02. Add chopped carrots, celery and potato. Sauté on medium heat until soft, about 10 minutes.
03. Add lentils, vegetable broth and thyme leaves and simmer for about 20 minutes until the lentils are soft. Add more broth to achieve your desired consistency.
04. Season with lemon zest, salt, pepper and serve with toasted sourdough bread.
