
Ending the February salad series with this refreshing winter fennel citrus salad that will brighten up those last grey winter days. The fennel brings you lots of fiber, the grapefruit vitamin C and antioxidants while the pine nuts add some healthy fats. Pair with fish or grilled chicken for a complete and nourishing meal.
Serves 4
Ingredients: (preferably organic)
- 2 fennel bulbs, washed & halved
- 2 grapefruits, segmented
- 2 tbsp pickled onion (find the recipe here)
- 2 tbsp roasted pine nuts
Honey Lemon Dressing
- 1 lemon, juiced
- ¼ cup olive oil
- 1 tsp honey
- ½ tsp salt
Directions:
01. Start by finely slicing the fennel on a mandolin and add to a salad bowl.
02. Make the dressing by mixing together the lemon juice, olive oil, honey and salt.
03. Mix the dressing with the fennel and then add the grapefruit, pickled onion and garnish with roasted pine nuts. Serve along a protein and you have the perfectly balanced meal!
