Chocolate Birthday Cake

Everyone needs a signature birthday cake recipe and of course I wanted to create one that lives up to the ESSENTIELLE standards by being vegan, gluten-free, refined sugar-free and of course, delicious! This is the one!! Super chocolaty, rich and decadent, just as a birthday cake must be but with good-for-you ingredients!

Ingredients: (preferably organic)

  • 3 cups GF oat flour (make it yourself by blending GF oats in your blender)
  • 1 cup raw cacao powder
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 ¼ cups water
  • 1 cup oat milk
  • ⅓ cup coconut oil, melted
  • 1 cup coconut sugar
  • ½ cup maple syrup
  • 2 teaspoons vanilla extract

Frosting:

  • 1 pack coconut milk (250 ml)
  • 100g vegan dark chocolate
  • 2 tbsp maple syrup

Directions:

01. Prepare the frosting first: Gently melt the chocolate and the coconut milk until creamy & mix together.

02. Pour the mixture into a bowl and let it set in the fridge for 2-3 hours. Check on it as it shouldn‘t get too firm, it should still be malleable and soft which will be the perfect consistency to apply the frosting to the cake.01.

03. Make the cake: Preheat the oven to 180 degrees. Coat a round cake panwith coconut oil & set aside.

04. In a large bowl, mix the dry ingredients: oat flour, cocoa powder, baking soda and salt. Set aside.

05. In a medium bowl, whisk together all wet ingredients: water, milk, coconut oil, sugar, maple syrup and vanilla. Whisk until well incorporated. Add wet ingredients to dry ingredients and fold in carefully.

06. Pour batter evenly into prepared cake pan. Bake for 25 minutes.

07. Let the cake cool completely before applying the frosting.
