Chickpea Avocado Beauty Salad

This is a super quick easy lunch that comes together in five minutes. It’s perfect for those back to school hot summer days when life is busy but you still want a healthy and filling meal. It’s got lots of fiber and plant protein from the chickpeas and healthy fats from the avocado.

Ingredients: (preferably organic)

  • 1 can chickpeas, rinsed
  • 1 avocado, peeled & cubed
  • 1 spring onion, thinly sliced
  • 1 lemon, juiced
  • a drizzle of olive oil
  • pink Himalayan salt, to taste
  • black pepper, to taste

Directions:

01. Place  the chickpeas & avocado cubes in a bowl. Drizzle with lemon juice and olive oil and season with pink salt and pepper. Gently mix through.

02. Top it off with the sliced spring onion and serve as a light lunch or a perfect complement to a summer bbq.
