Carrot Orange Ginger Soup

Simple recipes that use minimal ingredients are a go to these days. This Carrot Orange Ginger soup will warm you from the inside out and nourish your body with immunity boosting super foods.

Ingredients: (preferably organic)

  • 10 large carrots, peeled & chopped
  • ½ orange, juice & zest
  • ½ onion, diced
  • 1 clove garlic, diced
  • 1 small piece ginger, grated
  • 1 tbsp avocado oil
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • pink salt, to taste
  • black pepper, to taste
  • hemp seeds, for garnish
  • cilantro, for garnish


Directions:

01. In a large pot, heat the avocado oil, add onion, garlic & ginger and sauté until translucent.
02. Add the carrots and cook for five minutes until they begin to soften.
03. Squeeze the orange over the carrots and add the vegetable broth, simmer for 20 minutes.
04. Transfer to a high speed blender and blend.
05. Pour the soup back into the pot and add a little water or more broth if necessary to get to the desired consistency.
06. Add the orange zest, turmeric, salt and pepper, stir and cook for another minute.
07. Pour soup into a bowl, garnish with cilantro and sprinkle with hemp seeds. Enjoy!
