Brunsli

Nothing better than Swiss Christmas cookies! I tried to recreate my favorite one, Brunsli, which is basically a chocolate cookie, in a healthy way and it came out so good! It’s vegan, gluten-, nut- & refined sugar-free and a great treat to share with your loved ones for the holidays!

Ingredients: (preferably organic)

  • 2 cups sunflower seeds
  • 2 tbsp oat flour
  • 1 cup coconut sugar
  • ¼ tsp cinnamon
  • pinch of salt
  • 120g vegan dark chocolate
  • 1-2 tbsp water (optional)


Directions:

01. In a food processor, grind the sunflower seeds into a fine flour.
02. In a mixing bowl mix together sunflower, oat flour, coconut sugar, cinnamon and salt. 
03. Bring a pot of water to the boil, place the chocolate in a ceramic bowl and place it in the water to gently melt the chocolate.
04. Pour the chocolate into the flour mix and mix together until if forms a dough, add some water if needed.
05. Place dough in the fridge for an hour our overnight.
06. Roll out the dough about 7mm thick and use cookie cutters to make little cookies. Repeat until all the dough is used up.
07. Place on a baking sheet lined with parchment paper and let the cookies dry for at least five hours.
08. Pre-heat the oven to 180 degrees (fan setting) and bake the cookies for 5-10 minutes. Let cool and enjoy them with your loved ones!
