Disrupting my usual posting schedule with this bomb recipe I came up with this morning. It’s rare that I’m completely happy with my creation the first try around but this Banana Sourdough French Toast came out amazing and is too good not to share immediately. The perfect plantbased, refined sugar-free treat for your weekend brunch!
Serves two.
Ingredients: (preferably organic)
- two pieces of bread from a large sourdough loaf, cut in half (I used 100% rye)
- 1 banana
- 1 cup oat milk
- cinnamon, to taste
- coconut oil, for frying
- coconut yogurt, to serve
- banana slices, to serve
- a sprinkle of cinnamon, to serve
- maple syrup, to serve
Directions:
01. Mash the banana and mix with oat milk and cinnamon in a bowl wide enough to fit the bread.
02. Place the sourdough in the mixture and let soak for about 5 minutes, turning half way to cover both sides.
03. In a large pan, heat up the coconut oil (a generous amount, I used 1-2 tbsp) to medium and fry the toast until golden and caramelized.
04. Plate and serve with coconut yogurt and banana slices, drizzle with maple syrup and dust with cinnamon. Enjoy!
