Banana Oat Pancakes (V & GF)

The absolute BEST pancakes, perfect for brunch or whenever you feel like a little treat for breakfast, since they are basically oatmeal in pancake form. They use minimal ingredients that you probably already have in your pantry and are whipped together in no time. Plus, they are plantbased and gluten-free!

Serves two.

Ingredients: (preferably organic)

  • 1 cup gluten-free oats
  • 2 bananas
  • ¾ cup oat milk
  • ½ tbsp coconut oil, melted
  • ½ tsp baking powder
  • cinnamon, to taste
  • a pinch of sea salt
  • coconut oil, for frying
  • coconut yogurt, for garnish
  • cocoa nibs, for garnish
  • maple syrup, for garnish


Directions:

01. Combine all the ingredients in a high-speed blender and blend.
02. Warm a pan up to medium heat, add a bit of coconut oil and fry the pancakes until they get bubbly and firm up on the upper side, then flip and let cook through until golden.
03. Repeat until all the batter is used up. Keep the cooked pancakes warm on a plate covered with tin foil meanwhile.
04. Stack the pancakes, add a dollop of coconut yogurt, sprinkle some cocoa nibs and add a drizzle of maple syrup. Enjoy!
