This is literally Fall in a cake. It combines all our favorites, pumpkin spice with rich chocolate and as decadent as it tastes it‘s the perfect healthy snack because it‘s vegan, refined sugar free and gluten free. It‘s the perfect treat for a cozy afternoon tea or dessert for dinner with friends.
Ingredients: (preferably organic)
- 1 ½ cups pumpkin puree
- ½ cup maple syrup
- 3 tbsp coconut oil, melted
- 1 flax egg (1 tbsp flax seeds & 2 tbsp water) or 1 regular egg
- 1 cup GF flour
- 1/4 tsp vanilla seeds
- ½ cup cacao powder
- 1 tsp baking soda
- 2 tbsp pumpkin spice
- ½ cup shredded coconut
- ½ cup dark chocolate chips
- coconut flakes, for garnish
- cacao nibs, for garnish
Directions:
01. Pre-heat the oven to 180C and line a loaf pan with parchment paper.
02. Combine the wet ingredients in a bowl: pumpkin puree, maple syrup, coconut oil and flax egg and mix well.
03. Combine the dry ingredients and mix with the wet ingredients: GF flour, vanilla seeds, cacao powder, baking soda, pumpkin spice and shredded coconut. Gently fold in the chocolate chips.
04. Pour the mixture into the parchment paper lined loaf pan and top with coconut flakes and cacao nibs.
05. Bake for 50-60 minutes and enjoy this perfect Fall sweet treat!
