Summer in a bowl – sweet juicy tomatoes and char grilled corn make this the perfect lunch or dinner side – pair with an array of grilled veggies for the ultimate summertime meal. Tomatoes are high in lycopene which is an antioxidant and corn brings lots of fiber and complex carbs.
Ingredients: (preferably organic)
- 1 head lettuce, chopped
- 2 ears corn
- 1 yellow tomato, chopped
- 1 cup cherry tomatoes, chopped
- spring onion, sliced, for garnish
Lemon Tahini Dressing
- 1 lemon, juiced
- 1 tbsp tahini
- ¼ cup olive oil
- ½ clove garlic, minced
- ½ tsp pink Himalayan salt
Directions:
01. Pre-heat the grill and place the corn on there until it‘s evenly grilled. Let cool slightly and cut off the kernels with a large knife.
02. Make the dressing by combining lemon, tahini, olive oil, garlic and salt and mix until smooth.
03. In a large bowl, place the lettuce, tomatoes and corn. Top with spring onions and drizzle with dressing before serving. Perfect to complement any summer veggie bbq
