High Protein Chocolate Mousse

I have been making more of an effort to include high quality protein into my lifestyle for satiety, energy and to balance blood sugar levels. This high protein chocolate mousse is a sweet treat that will make you feel your very best as it tastes delicious and indulgent but is high in plant protein, refined sugar free and vegan.

Serves 4

Ingredients: (preferably organic)

  • 1 ½ bar vegan dark chocolate, refined sugar free (150g)
  • 2 tsp coconut oil
  • 1 pack silken tofu (400g)
  • ¼ cup dark chocolate powder
  • ⅓ cup maple syrup
  • cacao nibs, for garnish

Directions:

01. Start by breaking the chocolate into small pieces and melt it in a microwave or bain marie together with the coconut oil.

02. Add the silken tofu, dark chocolate powder maple syrup and melted chocolate to a high speed blender and mix to combine.

03. Divide the mousse into four small serving bowls, cover and refrigerate for at least four hours. Garnish with dark chocolate chips and enjoy with mixed red berries.
