Super Green Greek Salad

I love greek salads and this variation is so fresh and a fun way to mix up a classic greek salad. I love to make this as a side at dinner with a pasta or potato and vegetable dish or as a light lunch. The dressing makes extra so it’s easy to keep on hand for other salads. The romaine is fresh and full of fiber, the cucumber provides lots of hydration and the olives have plenty of unsaturated healthy fats.

Serves 4

Ingredients: (preferably organic)

  • 1 head of romaine, washed & chopped
  • ½ cucumber, cut into small cubes
  • 1 spring onion, finely sliced
  • ½ block vegan feta, crumbled
  • a handful green olives, sliced
  • hot greek peppers, sliced (optional)

Lemony Tahini Dressing

  • 2 lemons, squeezed
  • 1 clove garlic, minced
  • ½ tsp pink Himalayan salt
  • 1 tbsp tahini
  • ⅓ cup olive oil

Directions:

01. Make the dressing by mixing everything together in a glass jar until combined.

02. Assemble the salad in a large bowl, first the lettuce then layer the cucumber, vegan feta, olives, spring onion and hot peppers on top. 

03. Mix with the dressing and enjoy as a side or light lunch.
