Twix Power Bar

Are you also in the need for a sweet treat to brighten up the grey winter weather? These healthy twix bars are the perfect sweet indulgence if you crave a little something after a meal or as a snack. They are vegan, gluten- & refined sugar free, providing you with good fats and plant-protein from the nut butter as well as fiber from the almond flour plus the dark chocolate is full of antioxidants.

Makes 8 bars

Ingredients: (preferably organic)

Cookie Layer

  • 1 ½ cups almond flour
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Caramel Layer

  • ½ cup nut butter (I used peanut)
  • 2 tbsp coconut oil, melted
  • ⅓ cup maple syrup
  • 1 tsp vanilla extract

Chocolate Layer

  • 1 ½ bar vegan dark chocolate
  • 2 tsp coconut oil

Directions:

01. Pre-heat the oven to 180C and line a loaf pan with parchment paper.

02. Mix together all ingredients for the cookie layer and press the dough into the prepared baking dish. (it will be crumbly) Bake for 20 minutes until golden. Let cool while you prepare the caramel layer.

03. Make the caramel by combining nut butter, coconut oil, maple syrup & vanilla extract. Spread over the cookie layer and place in freezer for 30 minutes.

04. Gently melt the chocolate and coconut oil together in a bain-marie. Pour the chocolate as the top layer and place back in the freezer for 15 minutes.

05. Cut into bars and enjoy. The bars keep in the fridge for up to a week.
