This is a super easy and quick recipe for any weeknight meal and also perfect to prep ahead. Dhal is a traditional dish from Ayurvedic medicine, often used on cleanses and it’s said to be very warming and soothing, so perfect for cold January weather. The ginger and spices will help to boost immunity and the lentils provide lots of fiber and nourishing plant-protein.
Serves 4
Ingredients: (preferably organic)
- 1 ½ cups red lentils
- 1 tbsp coconut oil
- ½ onion, finely chopped
- 1 clove garlic, minced
- a small piece of ginger, grated
- ½ tsp turmeric
- ½ tsp ground cumin
- 1 tsp paprika powder
- 1 tsp curry powder
- 1 cup smooth canned tomatoes
- 2-3 cups vegetable broth
- 1 cup coconut milk
- pink Himalayan salt, to taste
- black pepper, to taste
- 2-3 handfuls fresh spinach
- 2 cups basmati rice, cooked
- fresh cilantro, for garnish
- coconut yogurt, for garnish
- lemon or lime, for garnish
Directions:
01. In a large pot, heat up the coconut oil. Sauté the onion, garlic & ginger until translucent, then add the spices and stir to combine.
02. Add the lentils and vegetable broth and bring to a boil, turn down the heat. Add the puréed tomato and coconut milk and bring to a simmer for 15-20 minutes until the lentils are tender.
03. Mix in the spinach and season with salt and pepper and serve with basmati rice, coconut yogurt, cilantro and fresh lime. Enjoy!
