This is the perfect appetizer for your Holiday gatherings plus it’s super easy to make! Pear is high in fiber, vitamin C and potassium while the hazelnuts are anti-inflammatory and full of good fats.
Ingredients: (preferably organic)
- 1 pear, washed
- 1 paillasse or sourdough bread, sliced
- a dash of olive oil
- vegan ricotta (I use New Roots)
- a drizzle of honey
- 1/2 cup hazelnuts, chopped & roasted
- fresh thyme, for garnish
Directions:
01. Pre-heat the oven to 200C. Prepare two baking sheets lined with parchment paper.
02. Thinly slice the pear with a mandolin and spread the slices evenly on the baking sheet. Bake for 10-12 minutes, checking every now and then for it not to burn.
03. Lay out the sliced bread on the other baking sheet and drizzle with olive oil. Toast in the oven for 5-10 minutes until golden. Let cool for 5 minutes.
04. Spread the ricotta on the bread slices and drizzle with honey. Top every bread slice with a pear chip and garnish with roasted hazelnuts and fresh thyme. Enjoy!
