Cinnamon Apple Overnight Oats

Set yourself up for success with this easy grab and go overnight oats recipe. It’s definitely giving fall vibes with the delicious apple cinnamon flavors and it’s so easy to prepare ahead to have on hand the next morning when you are in a time crunch but don’t want to miss out on fueling your body with good nutrients. The oats are a great source of fiber and iron, the chia seeds and almond butter provide unsaturated healthy fats and the apples give you your daily dose of vitamin C.

Ingredients: (preferably organic)

  • 2 apples, cut into small bite-size pieces 
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 3/4 cup oat milk
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 2 tbsp cashew or almond butter
  • 1 tsp vanilla extract
  • 1/2 cup GF oats

Directions:

01. Heat up the chopped apples, cinnamon, maple syrup, and salt in a small pan and add a splash of water. Lower the heat and simmer covered for about ten minutes, stirring occasionally.

02. Mix the oats, oat milk, chia seeds, maple syrup, cinnamon, nut butter and vanilla. Stir until well combined.

03. In two small jars, place the apple at the bottom of each container, add the oats as the middle layer and top off with the rest of the apples.

04. Place in the fridge overnight and enjoy the next morning with some more cinnamon on top.
