This rainbow colored crunchy bowl of goodness is the perfect complement to any summer lunch or dinner, or even perfect on its own for a light and refreshing meal. It‘s full of vitamins and super hydrating, just what you need on a hot summer day.
Ingredients: (preferably organic)
- 1 yellow bell pepper, finely diced
- 1 cup cherry tomatoes, finely diced
- 3-4 Persian cucumbers, finely diced
- ½ red onion, finely diced
- ½ block vegan feta, crumbled
- a handful mint, finely cut
- a handful basil, finely cut
- a squeeze of lemon
- a splash of olive oil
- black pepper, to taste
- pink Himalayan salt, to taste
Directions:
01. Mix bell pepper, cherry tomatoes, cucumber, red onion, vegan feta and herbs in a bowl, dress with lemon juice and olive oil and season to taste with black pepper and pink salt. Mix well & enjoy!
