Gazpacho Glow

This is one of my favorite refreshing summer dishes, super easy to make and a crowd pleaser for sure at your summer barbecue! It’s packed with vitamins and antioxidants from the peppers and tomatoes and super hydrating with the cucumber’s high water content.

Ingredients: (preferably organic)

  • 1 English cucumber, peeled and sliced
  • 1 yellow pepper, cubed
  • 1 red pepper, cubed
  • 4 tomatoes, cubed & de-seeded
  • 2 tbsp tomato paste
  • 1 cup vegetable bouillon (cold)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • pink Himalayan salt, to taste
  • black pepper, to taste
  • pepper, cucumber & avocado, finely diced, for garnish

Directions:

01. Place all the ingredients in a high speed blender and blend until smooth.  Chill in the fridge for two hours before serving. Garnish with finely diced vegetables and a splash of olive oil and enjoy!
