Blueberry Chia Pudding

This is such a yummy breakfast or snack and gives you plenty of fiber and omega-3s from the chia seeds, the blueberries are good for antioxidants and the almond butter gives you healthy fats and protein.

Makes one large or two smaller servings

Ingredients: (preferably organic)

  • 6 tbsp chia seeds
  • ½ cup oat or almond milk
  • 2 tsp maple syrup
  • a pinch of vanilla seeds
  • blueberries, for garnish
  • almond butter, for garnish
  • cacao nibs, for garnish

Directions:

01. In a bowl, mix together chia seeds and plant milk, add the maple syrup and vanilla seeds. Pour into one large or two smaller containers, close the lid and place in the fridge overnight or for at least two hours.

02. Before serving, garnish with blueberries, almond butter and cacao nibs. Enjoy as a filling breakfast or snack!
