Tofu Nuggets

Having all kids home with no school means food shopping, cooking and looking for inspiration 24/7. We all want recipes that are simple, fast and healthy and that of course will be loved by our little ones. These tofu nuggets check all the boxes and they provide lots of plant-based protein as well as calcium plus they are super yummy so even the pickiest eaters will love them!

Ingredients: (preferably organic)

  • one block extra firm tofu
  • ½ cup GF breadcrumbs
  • ½ tsp turmeric
  • ½ tsp smoked paprika powder
  • ½ tsp pink Himalayan salt
  • a pinch of black pepper
  • olive oil, to brush or spray on

Directions:

01. Pre-heat the oven to 200 degrees and prepare a baking sheet lined with parchment paper.

02. Prepare the breading by mixing together the breadcrumbs, turmeric, paprika powder, pink salt and pepper. 

03. Slice the tofu into cubes and roll them in the breading to coat evenly. Line the nuggets up on the baking sheet.

04. Spray or brush the nuggets with olive oil and bake for 30-40 minutes until golden.

05. Serve with a side of homemade potato cuts and veggies and your kids will love them!
