Roasted Tomato Soup

Serving you cozy comfort food to start the year! This roasted tomato soup requires literally no cooking, is so easy to make and tastes delicious! Plus it’s great to know that Tomatoes are a great source of vitamin C & K, potassium, folate and magnesium.

Serves 4

Ingredients: (preferably organic)

  • 4 large heirloom tomatoes, cut into pieces
  • 1 onion, halved
  • 1 clove garlic, unpeeled
  • 2 tbsp olive oil
  • pink Himalyan salt, to taste 
  • black pepper, to taste
  • dried or fresh thyme, to taste
  • 1 tbsp date syrup
  • a few basil leaves
  • 1 cup vegetable broth

Directions:

01. Pre-heat the oven to 200 degrees and spread out the cut tomatoes on a parchment paper lined baking sheet along with the garlic & onion. Toss everything with olive oil and season with salt, pepper and thyme. Bake for 30 minutes.

02. In a high speed blender, combine tomatoes, onion, peeled garlic, date syrup, basil leaves and broth and blend to combine. Add more broth until you reach your desired consistency and season with more salt and pepper if necessary. Serve with a vegan grilled cheese and side salad. Enjoy!
