Serves two.
Ingredients: (preferably organic)
- 1 cup basmati rice
- 1 can coconut milk
- 1 cup edamame
- 2 carrots, sliced into noodles
- ½ cucumber, sliced into noodles
- ½ mango, in cubes
- 1 avocado, in cubes
- pomegranate seeds, for garnish
- spring onion, sliced, for garnish
- black sesame seeds, for garnish
- spicy sriracha mayo, for garnish
- coconut aminos or tamari sauce, for seasoning
Directions:
01. Bring the rice and coconut milk to a boil in a pot, reduce heat and simmer until done.
02. Arrange your bowls: top rice with carrots, cucumber, edamame, avocado and mango and garnish with pomegranate, spring onion, spicy sriracha mayo and black sesame seeds. Enjoy!
