I won’t settle for anything less than deliciousness when creating my recipes and of course keeping my creations the ESSENTIELLE way which means vegan, gluten-free and refined sugar free. It’s not always easy but challenges my creativity and that I love. A gluten-free vegan brownie has been on my list for a long time and I’ve finally nailed it! Super simple ingredients and made in ten minutes plus 30 minutes baking with all good for you ingredients that make a super indulgent treat!
Makes 6 brownies
Ingredients: (preferably organic)
- 100g vegan dark chocolate, chopped
- 100g vegan dark chocolate, melted
- ½ cup coconut oil, melted
- ¾ cup coconut sugar
- 2 ripe bananas, mashed
- 1 tsp vanilla extract
- 1 cup GF oat flour (DIY by blending oats in food processor)
- ¼ cup raw cacao powder
- ½ tsp baking powder
- a pinch of salt
- Maldon sea salt, for garnish
Directions:
01. Pre-heat the oven to 180 degrees and line a brownie baking dish with parchment paper.
02. Mix together the dry ingredients: oat flour, cacao powder, baking powder & salt.
03. Mix together the wet ingredients: mashed bananas, coconut sugar, melted dark chocolate, coconut oil & vanilla extract.
04. Mix wet with dry ingredients until smooth and fold in the chopped dark chocolate. Sprinkle with Maldon sea salt for that extra zing if you like.
05. Pour the batter into your baking dish and bake for 30 minutes. Let them cool slightly and enjoy!
