This is the perfect quick and light lunch bowl and it literally takes five minutes to throw together if you have a cooked grain on hand. You get plenty of fiber and protein from the chickpeas and grain of choice, while the additional toppings like cherry tomatoes, avocado, artichokes, olives & vegan feta make you dream of a vacation by the Mediterranean seaside.
Serves two.
Ingredients: (preferably organic)
- 1 head romaine salad, washed & chopped
- ½ can chickpeas, drained & rinsed
- 1 cup quinoa or pearl couscous, cooked
- 2 handfuls cherry tomatoes, halved
- 1 avocado, cubed
- a few canned artichokes, quartered
- a handful kalamata olives
- ⅓ block vegan feta cheese, crumbled
Lemon Tahini Dressing
- ¼ cup lemon juice
- 1 clove garlic, minced
- pink Himalayan salt, to taste
- 1 tbsp white tahini
- ½ cup olive oil
Directions:
01. Make the dressing by mixing all ingredients together and set aside.
02. In two bowls, assemble the salads: add the romaine base, top with chickpeas, your grain of choice, cherry tomatoes, avocado, artichokes, olives and feta.
03. Drizzle with lemon tahini dressing & enjoy!
