Serves 4-6
Ingredients: (preferably organic)
- 6 apples, peeled, cored & diced
- 1 cup frozen raspberries
- 1 cup frozen blueberries
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- a squeeze of lemon juice
- 1 tbsp plain flour (I use gluten-free)
Crumble Topping
- 1 cup pecan nuts, roughly chopped
- 1 cup GF oats
- ¾ cup coconut sugar
- 2 tbsp ground flax seeds
- 1 tbsp chia seeds
- 2 tsp cinnamon
- 3 tbsp coconut oil, melted
Directions:
01. Place the apples and berries in a saucepan, along with the coconut sugar, cinnamon, lemon juice and flour. Simmer for about 15 minutes, until soft. Add a splash of water if needed.
02. Pre-heat the oven to 180 degrees. In a bowl, combine pecan nuts, oats, coconut sugar, flax seeds, chia seeds, cinnamon and coconut oil and stir to combine.
03. Place the apple berry mix in a baking dish and top evenly with the crumble mix. Bake for 15-20 minutes until golden and bubbly.
Tip: You can pre-make this earlier in the day by shortening the baking time to 10 minutes, letting it cool and then finish baking for another 10 minutes right before serving.
