This is truly the most elegant and tasty way to serve eggplant. It’s also the perfect plant-based dish to make for a BBQ that everyone will love. Serve it over salad for a light lunch or with a quinoa tabbouleh for a nourishing dinner.
Ingredients: (preferably organic)
- 2 eggplants
- 2 tbsp tahini
- a drizzle of olive oil
- a squeeze of lemon
- fresh parsley, chopped
- pink Himalayan salt, to taste
- black pepper, to taste
Directions:
01. Place the eggplants on a grill or a grill pan and cook until charred and soft, for about 10-15 minutes.
02. Transfer to a large plate and with the help of two forks, pull the eggplants apart in the middle to flatten them. Remove some of the skin on the upside and drizzle with tahini, olive oil and lemon. Muddle a bit to combine and season with salt, pepper and fresh parsley.
