Such a fresh take on a classic pesto pasta! This will be my go-to summer pasta for sure. Creamy, lemony and super yummy! Plus, as always it’s so easy and quick to make, using minimal ingredients.
Ingredients: (preferably organic)
- 1 avocado
- 1 bunch basil
- 1 clove garlic
- ½ tsp pink Himalayan salt
- ½ lemon, juiced
- ¼ cup olive oil
- ¼ cup cold water
- 1 pack pasta of choice (I use GF brown rice pasta)
- hemp seeds, for garnish
- lemon, for garnish
- fresh basil, for garnish
- arugula, for serving
Directions:
01. Cook the pasta until al dente.
02. While the pasta cooks, combine all pesto ingredients in a high speed blender and blend until smooth.
03. Mix the pasta with the pesto, sprinkle with hemp seeds, garnish with more lemon and basil and serve over a bed of arugula.
